Do all neutral wires need to be connected?
Currently all of the neutral (white) wires coming into the box are connected together (and not to the dimmers). The new dimmers require connections to the neutrals. There are three bundles of wires coming into the box, two of them having their own triads of hot, neutral, and ground.
Why are there two neutral wires?
There are two black and two white wires in an outlet box because the outlet is in the middle of a series circuit, accepting power from another source and sending it on. Two cables are hot wires, bringing the power in and carrying it onward to the next. Two cables are neutral and do the same.

Can a GFCI outlet be wired half hot?
No. GFCIs receptacles cannot be switched, nor can they be split. Best bet is to use a GFCI breaker in the panel, then you can use regular receptacles that you can split and switch, and everything will be protected.
