Can you wire nut a ground wire?

Unless there’s a local amendment as Jim mentioned standard wire connectors are fine for EGC’s. You just cannot use the Greenie wire nuts (with the hole in the end) for ungrounded and neutral conductors.

What do you do with earth wire if not needed?

If you are using an earthed three core cable with a unit which does not need to be earthed then the earth cable can simply be trimmed back and safely secured using electrical insulation tape.
